THE STORY...Richard Speigel began his love affair with bees after leaving his D.C. law practice in 1970, living for a while on the Canadian/Washington border with only wood fires for heat, and cooking in below zero temperatures, fulfilling an intense need to explore subsistence living. A chain saw cut between the eyes sent Speigel to the warmth of the Big Island of Hawaii to heal, and he began to learn about bees. He and his late wife Laura worked for 16 years developing a way to capture the exquisite nectar of the Kiawe flower from which the bees make the rare White Hawaiian Honey. THE PROCESS...In a single grove on one side of the island are produced the flowers, heavy with nectar, that become the precious white honey. An underground aquifer feeds these trees, which are a Hawaiian relative of the mesquite, and in April or May, worker bees start gathering the nectar, carrying it to the hive, fanning it to reduce the moisture content, and turning it to honey. Volcano Island Honey experts must judge the precise moment when the honey is ready to be "picked"...If taken too early, the water content would be too high and the honey could ferment in the jar; too late, and it will have begun to crystalize in the comb. Then it would have to be heated to extract it, and enzymes, protein, and graceful, subtle floral flavors would be lost. Richard Speigel's honey is the work of a true artisan who is unwilling to compromise. Chef Goren Streng, executive chef at Hawaii's Mauna Kea Beach Hotel, sends Rare Hawaiian Organic White Honey to guests' rooms on their tea trays. Chef Glen Alos of the Kona Island Resort frankly states that Richard Speigel's honey is "better than sex"(!) He offers it to resort guests with scones and in his delectible mango vinaigrette. This fruity dressing is from the files of chef Glen Alos, Kona Village Resort, who recommends drizzling it on a mix of watercress, curly endive, radicchio, and arugula – or grilled chicken or fish.
½ teaspoon black peppercorns
Put the peppercorns in the bowl of a food processor; pulse until coarsely cracked Add remaining ingredients; process until smooth. Taste, add salt and pepper as desired, then process once more. Yield: about a cup.
1 medium papaya
Blend all ingredients until smooth. Delight yourself and your friends with approximately three eight-ounce servings of this delicious, nutritious Rare Hawaiian Smoothie!
